Salmon Pesto burgers.


End of summer is here.
The mountains are glowing with colors.
We decided to have our end-of-summer dinner with classic Salmon burgers last night.
Most grocery stores will have salmon burgers.
I know Trader Joes, Whole foods, and Sunflower markets carry them.

And remember, don't burn yourself

You will need:
Buns
Mozzarella cheese
Greens
Any other add-ins....tomatoes, mushrooms, or onions.
Pesto

Lightly toast your bun, add dab of mayo and slather pesto. Add salmon top with cheese (best if it melts) and greens (or any else you desire).
Mr. Nielson grilled our salmon. You can cook yours on the stove or in the stove...either way works fine.

Here is my classic Pesto recipe:

Pesto Recipe

  • 2 cups fresh basil leaves, packed
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Olive oil
  • 3 tablespoons pine nuts or walnuts
  • 3 garlic cloves, finely minced
Place basil leaves in small batches in food processor and whip until well chopped (do about 3/4 cup at a time). Add about 1/3 the nuts and garlic blend again.
Add about 1/3 of the Parmesan cheese; blend while slowly adding about 1/3 of the olive oil, stopping to scrape down sides of container.
Process basil pesto it forms a thick smooth paste. Repeat until all ingredients are used, mix all batches together well.

Enjoy!

Oooh I will have to try this one for sure. Yes and summer has almost put it's closed sign up for good. That corn looks good too. It reminds me of living in Utah with all of those Harward Farms people..yum.

I CRINGE every time you say don't burn yourself. My sister and her husband, like you and your husband, were in a fiery plane crash except they didn't survive. :(

Very odd that in the weeks following that tragedy, I burned myself cooking over and over and over again. Before that time, I had not burned myself in years.

That sounds AWESOME!!! I have a question for you... as a person with Nut Allergies, do you know of a good recipe for pesto that does not include nuts but still tastes good? Someone gave me a recipe and it was very bland! I have yet to find a decent one and there are so many good recipes with pesto that I dont even try because of the nuts!

concerning the pesto without nuts-I've been making pest without nuts for years-I forget you're even supposed to put them in there! I didn't have any when I first started making it, and it was so good, I never bothered with them!

Pesto Salmon with Pistachio crust

Smother large piece of salmon with pesto sauce and then spinkle crushed pistachios all over the top, bake at 375 until done, you will love it!

I have salmon in the fridge so this will be perfect tomorrow night!! tonight it is shrimp scampi. I made your corn pudding for the second time last night and I think I ate half of it myself ( I drizzled it with some maple syrup I brought back form upstate NY when I was visiting home a couple weeks ago)

we eat salmon year round here in western washington and yet i have never had a salmon burger. i do believe it is time to make them, so they are being added to this weeks menu items. i also love pesto, so this is a 'can do" meal for us.

I have not seen Salmon burgers here in Northwest Indiana - someone said Costco, so I will have to try there - my husband loves salmon! The recipe looks sooo good! And I need a good pesto recipe. What a nice end of summer meal.

I thought you might like to try a different pesto i make here in sunny (at the mo) Norfolk, UK....

Replace your Basil with Coriander leaves (do you call it cilantro?!)
Leave out the garlic, add some sea salt and 2 red chillies finely chopped if you're feeling like a kick!

I have never seen salmon burgers! Maybe because my hubby does all the grocery shopping, just like his dad used to do!!! His dad used to do all the cooking too! Jer hasn't tried that yet and after 36 years it doesn't look hopeful that he ever will! LOL I LOVE to cook though! I've never made pesto! Nothing like swinging, it will surely bring a smile every time!!! Swing on girly!

Unfortunately I do not live close to a Trader Joes, but I will keep my eye out for some delicious salmon burgers. I love pesto and need to harvest my basil from my front flower bed before the first frost.
