Cauliflower and Blue Cheese Soup

Cauliflower and Blue Cheese Soup


4 Tbsp Unsalted Butter
1 Large Sweet Onion, chopped
2 bay leaves
2 cloves of garlic
1 Medium head Cauliflower, cored and cut into 1" piece flowerets
2 ribs celery, thinly sliced
4 cups vegetable broth (canned or homemade)
2 cups half and half
1 Tbsp cornstarch
1/4 tsp white pepper
1/2 to 3/4 cups blue cheese
such as: Gorgonzola, Danish blue cheese, Stilton, or Blue Costello
1/8 tsp kosher salt

Chopped fresh basil
blue cheese crumbles

Can also add a few fresh made croutons or a few crosstini.

In a stockpot or large saucepan, heat butter;add onion and garlic, saute until soft. Add the cauliflower and celery; cook for 3-4 minutes, stirring often. Add broth and bay leaves. Cook on medium heat until cauliflower is soft, about 5-8 minutes. Remove bay leaves. Transfer to food processor or blender in batches. Return to pot. Or use a hand held immersion blender, and puree until smooth.

Mix cornstarch into half and half. Add mixture to pot, with pepper, blue cheese, and salt. Taste, add more salt and pepper, if desired. Bring to simmer on low-medium heat, until thickened. Be careful because of half and half not to burn bottom of pot or overheat and cause curdling. Serve with garnish of choice.

That sounds pretty good. I'm not a huge blue cheese fan but I bet it would be great with other cheeses too. I'll give it a try when Fall comes around. I'm ready too- it has been HOT HOT HOT this summer!

wanted to add, this soup was brought to the blog world in response to ...... seeing a giant head of cauliflower and thinking "wow that is cook, but what in the world will i do with that big thing."

point ??

1. you can grill/roast some cauliflower in a double batch. first night, use the cauliflower just like that. store half (plus any leftovers) and the next day, make "the soup."

2. leeann's comment above, yes, this is a recipe for the blue cheese lover. i agree another cheese would work. or potatoes. this can actually be "leftover veggie soup."

3. this soup freezes well. in my opinion, this is more of an appetizer soup. with the cheese, it is rich. for a "meal soup," i prefer to serve something that is full of chunks of root vegetables, flavorful broth, etc.... (no cream) where you can go back and have seconds and not be struggling to stay withing the days calorie count.

4. as a paraphrase from French Don't Get Fat, "the worst in season is better than the best out of season." This is a basic soup, please use whatever veg is in season. or whatever odds and ends are left over.

BABIES oh how I wish your desire for more babies would let you take a look at all the babies waiting for homes. I just left Ethiopia and babies, beautiful babies, needy lonely babies, in soggy wet diapers would love to be a Nielson baby. Oh so THANKFUL we added to our brood via adoption. The Ethiopia or Bust bloggers just brought home a delicious baby girl. I highly recommend the Summit Orphan Conference in May to bump shoulders with hundreds of people that love Jesus and love children. Oh you could CHANGE THE WORLD getting the word out for orphaned kids. James 1:27

Anyway, that lady at the grocery store has absolutely no idea what she is talking about--you are amazing and beautiful. I cannot believe that people do not stop to think about what they say before they say it. Please don't listen to comments like that or take them to heart.
You are awesome and you uplift me every day. I loved your blog before the accident because of the type of mother and wife that you are--the type that I would like to be. I love your blog even more now because of your strength and faith through your trials. You are wonderful!

I just wanted to tell you what an inspiration you are to me. I actually started blogging because of you and your sister and I find it such a great way to journal our day to day life. I suppose I'm somewhat of a blog-addict {at least my husband says so}.

I just read your post about your theme for the year. I remember reading about this a couple of years ago before the accident. I have yet to do anything this full scale with my children, but we do always pick a theme for the year. I have been having a hard time deciding what it might be this year. Would you be terribly offended if I outright copied you??? I usually like to find good ideas and tweak them a little to make them my own, but this back to school affair, complete with handmade crowns, ornaments, and theme, does not need any tweaking.

I have to share this: I went to see a movie called "Nanny McPhee 2" (not sure about the spelling) and kept trying to figure out who two of the children reminded me of. I am a children's pastor so I know quite a few. Anyway, about half way through, it hit me...they remind me of Nie's Nic & Claire though your two are much cuter and those kids were quite cute!
